I test the humidity in my apartment by how fast my coffee grounds dry after I make myself a pot of coffee. I used to just turn the coffee maker off, and open the container with the coffee grounds so that they would dry out before I put them in the trash. My theory was that in the process of drying out they would make my apartment smell good :) Also, it's easier to dump dry grounds in the trash instead of wet grounds.
What I found out was that sometimes my grounds became dry very quickly, before the end of the day. Because of this I realized that the air in my apartment was very dry. This happens more in the winter, and less in the summer. The heater expels dry air, whereas the air-conditioner expels more humid air.
When the air in my apartment is dry I drink more water so I won't get dehydrated. So, in essence, used coffee grounds are contributing to my overall health and well-being.
