John Coltrane

I was listening to John's Coltrane's version of Raindrops on Roses while I was turning mexican wedding cookie dough into balls, and it really added to the experience. The action of turning a dollop of dough into a ball is round and round, and feeling the weight, and where it presses so it could become a ball. This version of Raindrops on Roses had a round and round, going out to come back in type of quality. Very cool.

I had to turn bread dough into balls for rolls at pastry school, and I never got the hang of it. It's a little humilating, because, really, how hard could it be? Are my hands too flat, what's the deal? I was thinking of this when I rolled those balls of cookie dough, and it is an awareness of the weight, and how it hits which part of the hand, and to keep it rolling. I don't see how I couldn't do it if I tried again. Pastry school was such a trial.
