I made Hazelnut-Honey Caramel Bars yesterday. I used the recipe in the All American Cookbook by Nancy Baggett. Ohmygawd! Sweet and seductive, so choice, and yet, so easy. Gotta love those bar cookies. She has a great idea, to put bar cookies in the fridge for about 1.5 hours so they are easier to cut. Not right after they are out of the oven, but about .5 hour after they are out of the oven. It worked like a charm.
It had been a while since I used a probe thermometer. It brought back memories of pastry school, which is not good, but in the long run, yesterday, it was a practical tool, and it's use was warranted.
