I have to take on the roll of Man of la Mancha. My dragons will be my memories of Pastry School which ruined my confidence. However, I am more comfortable reading recipes. My pilgrimage will start from bread books authored by Jesuit Brothers so I think I can take on those chef/egomaniac filled memories with the kitchen aid food mixer as my stead, and the dough hook as my lance.
My quest will yield wonderful croissants. I usually only bake a cookie recipe once because I have so many cookbooks. However, I think bread baking will take me to a different level of creativity and world understanding, and I'm willing to bake the same recipe until I am happy with it, or incorporate a few recipes until I'm happy with my collage. I plan on baking 4 breads: butter croissants, pain au chocolate, almond croissant, and potato bread. Once I get these to the best I can then I will move on to other yeast breads, and sourdoughs. I really want to master those; the 3 types of croissants I can share, and potato bread is SO GOOD with brie cheese, or olive oil, or soft butter. It is truly worth battling my demons.
