I baked Classic Apricot Squares from King Athur Flour Cookie Cookbook. They were a hit at work. I suggest that you keep the topping cold during the cooking of the filling, and the baking of the base. In this way when the topping is ready to spread on the filling it will be easier to break into bits. The topping has a lot of butter, and if at room temperature the topping will clump together. Also, if you are using tin foil to prepare the pan, spray non-stick spray before you put the tin foil on AND after you put the tin foil on. I lost a good quarter inch to tin foil because it stuck to it.
Earlier I wrote how I sent cookies to three people across the country, and they delivered them to shelters. I did this because I asked three people at work if they wanted to do this with me i.e., I bake something, bring it into work and they deliver it for me. I got one person to refer me to another person, and two people who didn't believe food banks would take home baked goods. Food banks don't but shelters do. With this belief, and truth, still in my mind, I asked a fourth person today. Starting next Thursday I'm bringing in cookies to work that he will deliver to Charlie's Place. I'm very excited about this. I've been bringing in cookies to work for over a year and he's definitely seen them which is why the trust is probably there. Also, from his actions I can tell that this project might interest him, and it does. Yeah Teamwork!
